Potato Soup

Ok, so who doesn't love some homemade potato soup? On cold rainy days like today it is perfect...and easy.
 
I started with a 5lb bag of Idaho potatos, 1 can each of cheddar soup and cream of chicken soup, salt and pepper to taste, onion flakes.
 
I saved about 4 good size potatos from the bag for baking later this week. Peel and rough chop the rest of the bag into a pot. The size of the chop really doesn't matter since you will mush them later. Cover potatos with water and put on stove. On high bring to boil, cover, reduce heat and simmer till potatos stuck with fork will fall apart.
 
Mush some or all of the potatos...according to how chunky you want the soup. Do not drain the water!
 
Add both cans of soup and onion flakes. If you happen to a real onion laying around you can always saute it in a little butter and add it. If my child saw me doing that and adding it to the soup she wouldn't eat it anymore so I just use onion flakes. Cover and let simmer for a few minutes longer to let everything blend, stir often to keep from sticking.

Sidenote: Toppings are endless...bacon bits, crackers, shredded cheese, etc.
 
For adults or kids that like a kick I would add some cajun seasoning, red pepper flakes, cumin, etc. I never add anything but salt and pepper to my pot but always keep the other on hand to add to my individual bowl.
 
A great idea would be make a pot then set the toppings and seasonings on table for each person to add as they like.
