When I moved out of my parents house my mom gave me something I use all the time still today....a recipe book with even the simplist of recipes that she uses in it. Today I share pancakes.
You need: 1 egg, 3T sugar, 3T oil, 1t vanilla, 1cup milk, and 1cup self rising flour.
Mix all ingredients but flour and mix well. Add flour little at time till batter is as thick as you like. Warning, it will thicken a little while sitting.
Pour into lightly greased pan. Cook on medium heat till bubbles form on top, then flip. Brown on other side, only takes a few minutes.
Butter after out of pan while still hot.
Cut up...add syrup... and enjoy!
