With summer comes lots more work! Yards to mow, weeds to kill, fire ants to run from one place to another...pretending that expensive stuff you bought killed them, and the list goes on.</div>

Let's face it, I live in the country and love being able to work outside but it leaves little time for "playing" on the computer. I also work outside the home and at best have a very erratic schedule.</div>

I started this blog as a way to post some great recipes and thoughts on my little tiny section of the world. I have been doing that but have slowed down lately as summertime approaches. I promise to continue to post and will try to do at least one post a week. Ok, so as you can see these are made with toilet paper rolls. My prep work is I gave them with several coats of paint. Then when dry I let the girls decorate any way they liked. I supplied stickers, markers, sharpies, and crayons. They were only limited by their imagination. </div>

I started out in microsoft word (any word/drawing program will do) and made the stem. This was done by drawing a long rectangle. The leaf is two archs put together. I also added a large circle at the top to glue the petals to. I printed these on card stock and got two per page.</div>

Next I drew some hearts slightly elongated for the petals and a smaller circle for the center. I fit 7 hearts and the circle per page which makes one flower. I did this on card stock too, just to make things stronger.</div>

This craft allowed the girls to practice all of their fine motor skills and have something to be proud of afterwards. I didn't help them at all (even with spelling). Each one is unique to that child. We have one girl that is younger so she wrote a few words then drew pictures on the rest of her petals. As an afterthought I should have put magnets on the back so they would have been fridge ready.</div>

Here is a quick easy breakfast roll recipe that is sure to please. Put together the night before and let sit out all night, cook in morning.</div>

Grease bunt pan, add rolls. </div>

1 1/2 cup sugar, 2/3 cup all-purpose flour, 1/4 teaspoon salt, 2 cups milk (use 1 cup half-half for richer taste), 4 egg yolks (beaten), 3 squares melted chocolate or 9 tablespoons cocoa, 1 teaspoon vanilla, 4 tablespoons butter</div>

Who doesn't love Girl Scout cookies?! Like I've told you in the past I'm a girl scout leader. There are so many kinds of cookies for sale now days but have you ever wondered about when they first started? Lots have changed over the years...flavors, prices, designs, on and on. So while looking at other things I ran across this recipe, it's the original GS cookie. A simple butter cookie but very good. Hope you enjoy!<br />

Ingredients:<br />
1 cup butter, 1 cup sugar, 2 tablespoons milk, 2 eggs, 1 teaspoon vanilla, 2 cups flour<br />
<br />
Directions:<br />
Cream butter and sugar.<br />
Add well beaten eggs, then add milk, flavoring, and flour.<br />
Roll thin and bake in quick oven.<br />
Sprinkle sugar on top.<br />

Quick oven...hmmmm well that is the directions. So here is what I did, I used 350 degree. </div>

When it says roll thin they mean it. I used a cookie cutter to shape these cookies so if they are not thin they will not hold the shape. </div>

And like all butter cookie recipes it needs to stay cold till put in oven. I found the best results to take dough out of fridge in small batches, roll with rolling pin, cut, put on cold cookie sheet (I used parchment paper) then put back in fridge for a few minutes before putting in oven. It only takes a few minutes for them to cook, maybe 7-10 minutes. Take them out when the edges show sign of brown. If you leave them in till cookies is brown they will be rock hard.</div>

Ok, so I saw a version of this on another blog and decided to make my own version. Signing "I love you" is something my daughter and I have always done. I went into printshop to create my masterpeice. I used a normal sheet of paper to make mine, you can get as fancy as sending it somewhere as a photo to have it printed. Just make sure you leave a space at the bottom with nothing on it. </div>

First off let me give you a little background. My child does not like bread. Anytime you give her a sandwich of any kind she will open it up, eat the "guts" out of it and give you the bread back. Does not matter if it is made at home, Subway, or a fancy Deli, she just won't eat bread. I have tried several times over the years to get her to eat grilled cheese using both bread and burito shells, nothing. Well about a week ago we tells me how much she now loves them. I humor her and make one, I'm sure that she will eat one or two bites and give it back, but much to my surprise she finishes it. She has eaten one for breakfast now for about 5 days straight...what a surprise.</div>

I sat here trying my best to figure out what to post today. I looked through my cookbook, through my pictures, all kinds of ideas come to mind. It snowed here in Alabama Thursday and even though it is all melting today it was fun to watch come down. Of course all the kids have to get out in that wet, yucky mess we call snow. If you are not familiar with our snow it is not a light fluffy snow, it is wet, almost ice.</div>

Anyway I choose spaghetti casserole because you can make it and go play with the kids while it finishes cooking or put it in the crockpot and have it ready even later. I've also put it in the crockpot to keep it warm to take to potluck dinners.</div>

7 oz spaghetti cooked</div>
<div align="center">
2 lbs cooked beef</div>
<div align="center">
1 small chopped cooked onion (opt)</div>

30 oz sauce</div>

2 cups mozzarella</div>
<div align="center">
2 cups cheddar</div>
<div align="center">
1 can mushroom soup</div>

<strong>Directions:</strong></div>

Cook first 3 ingredients.</div>

Add sauce to beef.</div>

In 9x13 pan add 1/2 pasta, 1/2 sauce, 1 cup each cheese</div>

Pour soup over cheese and repeat layers.</div>

Cover, Bake 375 degrees for 30 minutes.</div>

The recipe card is from my old recipe book that is made of a picture album. You can just slide the cards into place and take them out then you want to use them. I now prefer using a 3-ring binder since you can type the recipes up and print them out on regular paper but I still use this one too. As I get older there is something about looking back at the handwritten recipes and seeing the ideas of my mom and grandmother in the pages.</div>

Ok, so who doesn't love some homemade potato soup? On cold rainy days like today it is perfect...and easy.</div>

I started with a 5lb bag of Idaho potatos, 1 can each of cheddar soup and cream of chicken soup, salt and pepper to taste, onion flakes.</div>
<div align="center">

I saved about 4 good size potatos from the bag for baking later this week. Peel and rough chop the rest of the bag into a pot. The size of the chop really doesn't matter since you will mush them later. Cover potatos with water and put on stove. On high bring to boil, cover, reduce heat and simmer till potatos stuck with fork will fall apart.</div>

Mush some or all of the potatos...according to how chunky you want the soup. Do not drain the water!</div>

Add both cans of soup and onion flakes. If you happen to a real onion laying around you can always saute it in a little butter and add it. If my child saw me doing that and adding it to the soup she wouldn't eat it anymore so I just use onion flakes. Cover and let simmer for a few minutes longer to let everything blend, stir often to keep from sticking. </div>

So on my prior post I showed you how to make snowflakes out of coffee filters...we did that for a while then her imagination took over. Our snowflakes turned into dresses and hats. Yes, the cold meds bottle became the "dress model". She is so proud of herself for figuring out how to custom fit the skirts and blouses to fit her model. There is lots of fittings to get it just right and sometimes some tape gets involved. This has sat out one my kitchen counter for several days now and she keeps going back to it to snip her, adjust there. I had to hide the unused filters to keep her from using all that I have in the house, she always has a new idea of how a "dress" should look. And of course...it takes uncut "material" to make a new outfit.</div>

This is a frugal way to entertain kids for hours. We all have coffee filters laying around, or at least most of us do. Start by folding filter in half. Then as you see below just keep folding, I folded mine three times. I also was using the smaller filters... the 4 cup size. </div>

My daughter and I do these on rainy days or days she is sick and stuck inside. Then we then tape them to the inside of the windows of the house. She loves it and everyone gets to see her creations. We also live in the south so it's about as close as we come to snow most of the time.</div>

I used white chocolate and claimed they were "melting snowmen". I used the white almond bark chocolate, it is east to use and melts in microwave. Roll balls in chocolate then return to wax paper. I spooned more chocolate on top afterwards.</div>

I was working late the night before and had to be at work early the next morning so this was a quick idea that wasn't so involved that I had to stay up all night. This post is a little different than my usual ones but something I've been thinking about. I have the weather "station" you see below hanging in my house, it was once my grandmother's. She passed away last November at the age of 96. She lived a long life and saw changes that we only read about in history books. Her life was not always easy, in fact most times it was a struggle in her younger years. I chose to take this little peice out of her house to have in mine because it was something I always saw hanging in her house and makes me think of her every time I walk by it. I didn't realize the lesson it would teach me till I got it home. It reminds me to always choose happy...and here is why. </div>

This little station tells you the weather as well as the temp...if it is nice outside you get the kids, if it is bad outside the witch comes out. It has a knob on the back to calibrate it so it will work correctly. When I got home I was trying to calibrate it to no avail. For the life of me I couldn't figure out why it would not work! Then I discovered the reason...my grandmother had taped it so that the kids stayed out all the time. In her home it was always good weather! </div>

In Girl Scouts our girls (grades k-4) were learning all about different countries to earn a patch. My little one chose Italy, sounds easy enough. Two things you should know, Italians cook very different to us and finding a dish that does not have tomatoes or liquer is very hard. So...we chose a dessert that she could do for her age.</div>

Using a biscuit cutter cut out small rounds and place in mini muffin cups. You can keep re-rolling out the dough till it is all used up..though my cups didn't turn out as well. Before putting them in oven, use a fork and poke the bottom of the cups. This keeps the dough from rising too much. If it does rise just poke back down and into cup shapes when you bring out of oven.</div>

Make sugar cookie dough according to directions on bag/box. Form into approx 1" balls. Place in a lightly greased mini muffin pan and smush (techinical term) them into cups.</div>

Bake at 325 till just a tint of brown. Take out and with wooden spoon handle smush middle back down for bowl effect. Return to oven and finish cooking until golden brown. This is the time consuming part...no exact times since it is according to how think you make your bowls. </div>

While still hot out of oven add caramel and chocolate chips. I added about 1/2 teaspoon caramel and then "some" (very percise I know) chips on top to cover caramel. Let set for a few minutes then with back of spoon swirl chips together to make smooth top. Let cool completely.</div>

These are super simple and very good. They will make your guest or family think you spent forever in the kitchen when it only takes a few minutes. They are better hot but still good when cooled. I took them to a leader's meeting for Girl Scouts along with pigs in a blanket.</div>

Unroll the cresent rolls, put the brown sugar on the rolls. Peel and slice the apple. Put one slice per roll on the small end. Start rolling...starting with small end till apple is completely covered. Make sure all ends are completely sealed or your brown sugar will leak out during cooking. Put on slightly greased cookie sheet and sprinkle apple pie spice on top. Bake at 350deg till golden brown.</div>

If your sugar leaks out I suggest you getting them off the pan before they cool, it is much easier. Put on a wire rack to finish cooling.</div>

I didn't peel the apple on the first set I made and did on the second. Difference...easier to eat (bite into) without the peel.</div>

I used Granny Smith apples and they were not tart in this dish. I used them because it was what I had on hand. Use whatever you like or have on hand. </div>
